welcome to day one of my roman pasta series. here's your bite, here's my bite, and here's how to make it. today we're making a classic carbonara and obviously eggs are a major ingredient in this dish. i like to use vital farms pasture-raised eggs. their hens have access to roman healthy pastures. i mean just look at the color of these yolks. then add in some freshly grated pecorino romano, a crack of black pepper, and most importantly a spoonful of that guanciale fat fruit flavor. and then add in some pasta water for that silky texture and also to temper the eggs. add your pasta directly into that pan. the heat is off right now. followed by your egg mixture, pasta water, guanciale, more pasta water, and stir until you get this gorgeous silky sauce. you can eat it directly out of the pan or plate it up with some extra guanciale and pecorino romano. enjoy!
