What I eat in a day working as a line cook at the three-star Michelin restaurant, 11 Madison Park in New York City. Before we eat, I head down to Union Square Market with Chef Stefano to pick up a few ingredients for tonight's service. Back in the kitchen, I feel a bit peckish, so I go around each station asking chefs for a small nibble. Finally, it was time for family meal, and come on, just look at this spread. I've worked in restaurants before, but I've never seen anything like this. After lunch, I make friends with the dessert team, and of course, I had to make a visit to the chocolate pretzel room. They're so good. The smell of roasted peanut butter was in the air, and I soon realized that it was their dog biscuits. So I tried them too. Don't worry, they're vegan. Just before service, Chef Mattia invites me to taste each dish on the menu. This is when chefs can make small improvements so that each dish reaches that high standard they strive for in every service. Then it was time for the main event. I sat at my table for one with the perfect view of the restaurant and waited to be served the best meal of my life. In all seriousness, this was the best meal of my life. And finally, dessert. It was almost too beautiful to eat. I was invited to the secret cellar room for a small tasting, and last but not least, I'm back in the kitchen for another sweet treat.
