There are seven times more school cafeterias than McDonald's in the United States. Which means that the school cafeteria is our largest restaurant chain and we don't treat it as such. But what would it look like if we said that the largest restaurant chain in this country happens between 7 and 8.30 and it happens again between 10.45 and about 1 and it serves 30 million customers every single day. Some of them have to pay, some of them have to pay a little bit, and then some of them get it for free. If you start reframing your mind to think about school food in that way, it should alter the conversation that we have because when we talk about healthcare outcomes for kids, we fly over the fact that the greatest place to leverage healthcare outcomes for children is in their school cafeteria.
