Every year when spring comes around, I crave these soft and chewy lemon blueberry cookies, which are so much more than just lemon cookies with blueberries folded in. In order to get a big punch of blueberry flavor, we're going to prepare a quick compote and that's going to give us these jammy swirls of blueberry through the cookie dough. The base recipe is simple. It starts with butter, brown sugar, white sugar, loads of lemon zest, and a little bit of lemon juice in with the egg. The key to baking with berries is to keep everything on the acidic side because their color compounds called anthocyanins are more bright and red when the pH is low, meaning it's more acidic. In order to do that, there's lemon juice in the compote and in the cookie dough and the baking soda is on the lower side and we're using some baking powder. Using no baking soda at all would mean these cookies wouldn't brown very much and they would have less flavor. Cut the blueberry mixture through the dough so you get these jammy pockets and thin shards of white chocolate add rich creaminess to contrast the bright fruity flavors. I love to eat these cold and the recipe is at ScientificallySweet.com
