Once flipped, gently press down, just a little & cook for an additional 3-4 minutes, or until fully cooked. Adjust heat accordingly. 6. For the glaze, mix together powdered sugar, milk & zest. ๐Ÿ‹

This is the perfect breakfast to make when you're craving something a little sweet, a little indulgent, but you're also wanting something high in protein. These are my lemon poppy seed pancakes made with Greek yogurt, or you can use cottage cheese. To make them a little extra, we are replacing the syrup with this lemon glaze. We're gonna start by mixing together all the dry ingredients, and blend together all the wet ingredients, and pour into the dry. The batter will be thick, and that is how you want it. Then you're gonna cook them up on a hot skillet. Then make the lemon glaze and serve it over top the pancakes with a little bit of butter. That's it, enjoy!

These high-protein lemon poppy seed pancakes use Greek yogurt or cottage cheese. They are topped with a lemon glaze instead of syrup for a delicious breakfast option.

  1. Use Greek yogurt or cottage cheese for high protein pancakes.
  2. Mix dry ingredients separately before combining with wet ingredients.
  3. Cook pancakes on low heat for 3-4 minutes per side.
  4. Prepare a lemon glaze with powdered sugar and milk.
  5. Serve pancakes with lemon glaze and butter for extra flavor.
