Welcome back to my series where I'm turning one $50 grocery haul into five healthy meals for two. Let's get right into recipe number one. This recipe is perfect for meal prep, and if you want to chop all your veggies and prepare everything beforehand, it will take minutes to put together. You'll need cucumber, green onion, cilantro, and some edamame for protein. Now, this is gonna be a salad, but not your usual salad. We're gonna make some crispy quinoa, which you toast in the oven with some olive oil until it's golden, then make this really yummy peanut dressing, and it has peanut butter and coconut aminos, sesame oil, all the good flavors. You just shake that up, and then when your quinoa is done, it's time to assemble the salad. You want to make sure everything is completely coated in the dressing. And then it's ready to eat. You can serve it chilled and keep it in the fridge. The recipe makes about three to four servings, so enjoy those leftovers.
